Cool weather is on the way and so are the fresh greens! This baby kale salad has all the great, savory flavors, making it a true side-dish or a healthy, satisfying lunch! You will find baby kale, garlic, and forest-raised bacon at the market this week!
Salad Ingredients:
- 1 pound baby kale
- 1/2 cup craisins
- 1/3 cup pine nuts, lightly toasted
- 4-5 slices Applewood smoked bacon, cooked and crumbled
- 1/3 cup fresh parmesan (shaved or shredded)
Honey Balsamic Vinaigrette:
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
- 1/4 cup balsamic vinegar
- 3/4 cup extra virgin olive oil
- 1 garlic clove, minced
Prepare the dressing:
In mixing bowl measure honey, mustard, salt, pepper and crushed garlic.
Add balsamic vinegar and whisk well
Gradually add EVOO, whisking after each addition until fully emulsified.
Prepare the salad:
Combine all ingredients in a bowl large enough for tossing
Add small amount of dressing and toss. Repeat until salad is evenly coated to taste. Kale will wilt as it is tossed and coated with the dressing
