This unbelievably quick and easy side dish has fresh Shishitos combined with savory oyster mushrooms and Asian flavors. Prepare as a side dish, or double the recipe for a satisfying vegan meal! You will find fresh Shishito peppers and oyster mushrooms at the market this week!

  • 20 Shishito peppers
  • 1 tablespoon sesame oil
  • 4 ounces oyster mushrooms ; sliced
  • 2 tablespoons soy sauce
  • 4 tablespoons Balsamic Vinegar
  • Salt and pepper to taste

Heat sesame oil in medium skillet

Add Shishito peppers, keeping them at a single level to cook sides

After peppers have cooked about 3-4 minutes add mushrooms

Turn occasionally, until the peppers begin to blister on all sides total cook time 7-9 minutes

Add soy sauce and balsamic vinegar and slightly reduce sauce

Salt and pepper to taste and serve
